Screw Conveyors

Conveyor

Lutetia offers a variety of loading and unloading conveyors. For example, the Block Conveyor allows transferring frozen blocks up to 25 kg, 400 mm wide and 200 mm high. It can be coupled at the output of a subsoiler and can load a tumbler by the lid or the hatch. This charger allows fast charging and secure. It also comes in the form an adaptable loading system to a set of tumblers.

Hydraulic loader

The two models of Hydraulic Loaders for bins of maximum 800 kg or 1100 kg (bin + meat) allows you to load the tumblers and injectors quicker, resulting in an increase of production, by reducing the number of rotations compared to what could be achieved with bins of 200 or 330 liters.

Pneumatic loader

The Pneumatic Loader for vats of maximum 300 kg (vat + meat) allows loading of tumblers and injectors much quicker than manual loading.

Vacuum loading

Vacuum loading systems for tumblers use the pressure difference as the motive force. The tumbler’s tank is connected to a loading tank through a pipe and the products and / or the liquid (brine, water…) are vacuum-sucked in the tumbler through pipes of diameter 80 to 200 mm according to the applications. The mass of products to be loaded must be dense enough not to induce vacuum leakage detrimental to the smooth running of the process..

Peripherals

Brine mixing units

The brine mixer is a vessel equipped with a stirring propeller that ensures the dissolution of the ingredients of a brine in water, with or without ice, in order to get a solubilized and homogeneous brine. Coupled to a tank of storage and your brining equipment (injector, tumbler), it improves the productivity of your fabrications and the quality of your products brine. Standard 400 liters capacity. A la carte specifically designed units: 650 to 3000 liters maximum, with cooling though a double-jacket, stirring by a pump and dry ingredients admission through a hopper.

Cryogenic cooling

Lutetia tumblers may receive our cryogenic options (i.e. cryo-cooling,fast cryo-freezing and IQF cryo-coating). The Cryo-Lutetia system makes it possible to carry out individual freezing of many food products. Cryogenic fluid (liquid nitrogen, dry ice) is injected in the tank as the products fall. Simple cooling (e.g. before forming) to IQF treatment is done without de-structuring the products by sequential injection of cryogenic fluid. Once the products have been cryo-freezed, they may be cryo-coated with a sauce or a tempura by alternatively injecting sauce/tempura and cryogenic fluid on the falling products in the tumbler.

Heat-cold groups

Heat and cold groups feed tumblers double-jackets or defrosting chambers tubular exchangers with heat controlled food grade glycol-water. Many models are available depending on your heat / cold power needs.

Lacerator

The Lacerator is a machine able to lacerate pieces of meat using rotating knives. This additional process leads to a significant increase in the exchange surface between the product and the brine. It can also results in the creation of ridges which favor the interpenetration of pieces of meat between each other during filling. Finally, like blade-tenderization, it damages connective tissues which reticulates myofibrillar proteins. Knowing that connective tissues hardly shrinks over 60 °C expelling cooking juices from the meat, its damaging increases cooking yield.

Supervisions

Filtration systems

The Lutetia Filtration Systems remove food particles from the brine. The Injectors can be fitted with a rotating filter, which is self-cleaning, minimizes foaming. Filtration systems are essential to food safety and injection accuracy.

Tenderizing system for massager

Blade-tenderization leads to a significant increase in the exchange surface between the product and the brine during tumbling.
